Fried cauliflower, zucchini and eggplant with tahini
A mixed vegetable mezze plate works best when each vegetable is cooked separately: cauliflower needs more time than zucchini, and eggplant absorbs oil quickly if the temperature falls. This home version matches the menu’s cauliflower, zucchini and eggplant combination, finished with a measured lemon-tahini sauce. The sauce goes on at the table so the browned surfaces are not softened before serving.

Ingredients
- 350 g cauliflower, cut into small florets
- 250 g zucchini, cut into 1 cm rounds
- 300 g eggplant, cut into 1.5 cm half-moons
- 1 teaspoon fine salt, divided
- 750 ml neutral frying oil, or enough for 4 cm depth
- 75 g tahini, stirred
- 45 ml lemon juice
- 1 small garlic clove, grated
- 75 ml cold water, plus up to 30 ml if needed
- 2 tablespoons chopped parsley
Step-by-step method
- Toss eggplant with 1/2 teaspoon salt in a colander and leave 20 minutes. Pat thoroughly dry. Wash and dry cauliflower and zucchini as well; surface water causes hot oil to spit and prevents clean browning.
- Whisk tahini, lemon juice, garlic and 1/4 teaspoon salt. Add 75 ml cold water gradually until smooth, then up to 30 ml more if needed for a drizzle. Refrigerate sauce while frying.
- Heat oil in a heavy deep saucepan to 350°F/175°C, keeping the pan no more than half full. Set a rack over a tray for draining. Fry cauliflower in small batches for 5–7 minutes, turning occasionally, until golden and a stem is tender when pierced.
- Allow oil to return to 350°F/175°C between batches. Fry zucchini for 3–4 minutes and eggplant for 4–5 minutes, until golden and tender. Use a slotted spoon to lift each batch onto the rack; do not pile the hot vegetables in a bowl where steam becomes trapped.
- Sprinkle the cooked vegetables with the remaining 1/4 teaspoon salt. Arrange on a wide platter, scatter parsley and serve tahini in a separate bowl or drizzle only over the portion being eaten. Serve promptly for the best contrast between soft centers and browned edges.
Helpful tips & substitutions
- Use a thermometer for the oil rather than relying only on bubbling. Cool oil makes the vegetables greasy, while overheated oil burns them before their centers soften.
- For an oven variation, toss vegetables with 3 tablespoons oil and roast at 425°F/220°C, checking zucchini after 20 minutes and cauliflower and eggplant after 30 minutes; the texture differs from frying.
- Tahini contains sesame. A lemon-olive oil dressing is a different option if appropriate, but all ingredients and cross-contact still need checking for guests with allergies.
Storage & make-ahead
Refrigerate vegetables and sauce separately within 2 hours, or 1 hour above 90°F/32°C, at 40°F/4°C or below. Use within 3 days; reheat vegetables to 165°F/74°C in an oven. Keep used frying oil away from the drain.
How to serve it
Serve with rice, hummus or warm pita offered separately. A small amount of pickled turnip adds a sharp contrast.
