Crunchy cabbage salad with lemon, garlic and mint
A cabbage salad can stay crisp and refreshing without a mayonnaise dressing. The approach here is to slice the cabbage thinly but not shave it into fragile threads, then massage briefly with salt before adding lemon and herbs. This home preparation complements rich mezze and grilled food while remaining distinct from the restaurant’s undisclosed seasoning blend.

Ingredients
- 600 g green cabbage, outer leaves removed
- 100 g red cabbage, optional for color
- 1 small carrot, about 80 g, grated
- 1 teaspoon fine salt, divided
- 3 tablespoons extra-virgin olive oil
- 4 tablespoons lemon juice
- 1 small garlic clove, finely grated
- 1 teaspoon dried mint
- 2 tablespoons chopped parsley
- 1/4 teaspoon black pepper
Step-by-step method
- Quarter the cabbage and remove the dense core. Slice green cabbage into thin strips about 2–3 mm wide. Slice the optional red cabbage the same way, and grate the carrot on the large holes of a grater.
- Place cabbage in a large bowl with 1/2 teaspoon salt. Massage lightly for 30–45 seconds, just until the leaves become more flexible but still snap when bent. Leave for 5 minutes, then drain any liquid that collects at the bottom.
- Whisk olive oil, lemon juice, garlic, dried mint, remaining 1/2 teaspoon salt and black pepper in a small bowl. Crush dried mint between your fingers as you add it to release its aroma.
- Add carrot and parsley to the cabbage. Pour over dressing and toss thoroughly, lifting from the bottom so the garlic and lemon reach every layer. Refrigerate for 15 minutes before serving.
- Stir once and taste a forkful containing both cabbage and carrot. Serve in a wide bowl with tongs or two spoons. For a longer meal, keep half refrigerated and bring it out later rather than leaving the entire bowl in a warm room.
Helpful tips & substitutions
- If using only green cabbage, replace the optional red cabbage with another 100 g green cabbage so the dressing ratio remains the same.
- Avoid prolonged aggressive massaging if you want a crisp salad. The aim is to soften the raw edge, not create sauerkraut-like texture.
- The garlic flavor strengthens during storage. Use half a small clove for a gentler version rather than trying to dilute a very strong dressing afterward.
Storage & make-ahead
Refrigerate at 40°F/4°C or below within 2 hours, or 1 hour above 90°F/32°C. Use within 3 days; the cabbage softens and releases more liquid over time. Do not freeze.
How to serve it
Serve with kafta, shawarma bowls, lentils or baked fish. Its acidity is especially useful beside fried vegetables and creamy dips.
