Lemon and garlic marinated beets
The menu identifies marinated beets but does not disclose the restaurant dressing, so this is a clearly separate home version. Roasted beets are cut while still slightly warm and coated in lemon, garlic and olive oil, then chilled. The result is a make-ahead side with a clean sweet-sour balance; it is refrigerated salad, not a shelf-stable pickle.

Ingredients
- 700 g medium beets, scrubbed
- 2 tablespoons water, for roasting dish
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 small garlic clove, finely grated
- 1/2 teaspoon fine salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped parsley
- 1 tablespoon chopped mint
Step-by-step method
- Heat oven to 400°F/200°C. Trim beet stems, leaving a short stub, and place beets in a covered baking dish with 2 tablespoons water. Roast for 45–60 minutes until a skewer slides into the center easily; larger beets may need another 15 minutes.
- Cool just until safe to handle, about 20 minutes. Rub off skins with a paper towel or gloved hands and trim the ends. Cut into 1.5 cm cubes or thin wedges, using a board that can tolerate beet stains.
- Whisk olive oil, lemon juice, vinegar, garlic, salt and pepper in a nonreactive bowl. Add the slightly warm beets and fold gently so each piece is coated. Warm beets take up dressing readily, but should not remain on the counter for the full marinating time.
- Transfer to a shallow covered container and refrigerate within 2 hours of cooking. Marinate for at least 2 hours, stirring once with a clean spoon. Add parsley and mint shortly before serving so the herbs keep a fresher appearance.
- Serve chilled or allow only the portion being eaten to stand for 10 minutes. Lift beets from excess dressing with a slotted spoon and arrange in a shallow bowl. Keep the remaining batch refrigerated.
Helpful tips & substitutions
- Vacuum-packed plain cooked beets can replace raw beets by cooked weight, about 550 g. Omit roasting water and proceed to dicing; avoid pre-sweetened or already pickled beets.
- Golden beets work too and stain less, though their flavor is milder. Keep red and golden varieties separate until serving if you want distinct colors.
- Acid in the dressing is for flavor, not validated preservation. Do not put this salad in pantry jars or treat it as canned pickles.
Storage & make-ahead
Keep at 40°F/4°C or below and use within 3–4 days. Refrigerate within 2 hours, or 1 hour above 90°F/32°C. Use a clean utensil each time and discard any portion left warm too long.
How to serve it
Serve beside lentils, grilled chicken or a cheese plate. Add a little crumbled feta only at serving if desired and appropriate for guests.
