Select a consistent cut

Bone-in pieces and boneless chicken cook at different speeds, so use the cut specified in the recipe. Keep pieces similar in size within one batch. Pat the surface dry before adding the marinade so the coating adheres more evenly. A yogurt-based mixture should be blended thoroughly before it touches the chicken, with no pockets of dry spice.

Check the seasoning blend

Tandoori masala, garam masala and plain paprika have different roles. Do not substitute them spoon for spoon without checking the recipe. Prepared blends may already contain salt, and chili strength varies widely. Mix a small portion of the yogurt and spices separately for a preliminary taste before handling the raw chicken; never taste marinade after it has contacted poultry.

Use oven space deliberately

Crowded chicken releases moisture into the neighboring pieces and makes even browning difficult. Arrange a single layer using the tray or rack setup described by the recipe. Watch closely during any final high-heat stage because the coating can darken quickly. Check the thickest part with a food thermometer; red spices and charred edges make visual judgments particularly unreliable.

Finish with fresh accompaniments

Serve with a simple onion salad, lemon wedges and a mild yogurt accompaniment if desired. Prepare these on clean surfaces and keep them separate from the raw-poultry area. A plain rice side lets the spice coating remain the focus. At the market, choose unsweetened yogurt and check spice labels before buying several blends that may duplicate the same ingredients.

COOK IT AT HOME

Oven tandoori-style chicken thighs

Yogurt and spices coat these chicken thighs while a hot oven develops a deeply colored surface. The color comes from paprika and turmeric rather than food coloring. This home-oven method is inspired by tandoori flavors but does not claim the smoke or intense heat of a clay oven.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 8 bone-in skinless chicken thighs (about 3 lb)
  • 1 cup plain whole-milk yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon neutral oil
  • 4 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 teaspoons paprika
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric
  • ¼ teaspoon cayenne, optional
  • 1¼ teaspoons fine salt
  • 1 lemon, cut into wedges
  • 2 tablespoons chopped cilantro

Step-by-step method

  1. Make two shallow slashes in the thickest part of each thigh with a clean sharp knife. Keep the raw chicken on a dedicated board.
  2. Whisk yogurt, lemon juice, oil, garlic, ginger, paprika, coriander, cumin, garam masala, turmeric, optional cayenne and salt. Coat chicken thoroughly, cover and refrigerate 4–12 hours.
  3. Heat oven to 425°F. Line a rimmed tray with foil and set an oven-safe rack over it. Arrange chicken on the rack, letting thick excess marinade drip away. Discard the remaining raw marinade.
  4. Roast 35–45 minutes, turning once, until the thickest part of each thigh reaches at least 165°F without touching bone with the thermometer.
  5. If desired, broil 1–2 minutes for darker edges, watching continuously. The yogurt coating can burn quickly, so move the tray farther from the heat if necessary.
  6. Rest 5 minutes on a clean platter, then scatter cilantro and serve with lemon wedges.

Helpful tips & substitutions

  • Skinless bone-in thighs stay moist; boneless pieces cook faster, so start checking early.
  • For milder chicken omit cayenne. Paprika can be mild or hot, so check the label.

Storage & make-ahead

Refrigerate within 2 hours and use within 3–4 days. Reheat to 165°F, covered initially to avoid drying. Freeze cooked chicken up to 2 months.

How to serve it

Serve with flatbread, cucumber raita and sliced onions.
