Chicken curry: building a flavorful onion and spice base
Chicken curry covers many different preparations, so begin with a complete recipe rather than a general idea of adding every spice in the cupboard.
Choose one curry method
Chicken curry covers many different preparations, so begin with a complete recipe rather than a general idea of adding every spice in the cupboard. Note the chicken cut, the onion quantity and the sauce style. A dry sautéed preparation and a generous gravy need different liquid decisions. Measure the spices before the pan is hot so you can add them deliberately.
Give the onions enough attention
Cook the onions to the color and texture required by the recipe, stirring so they develop evenly. Turning the heat high to hurry this stage can leave burned edges around a raw center. If the pan catches, lower the heat and use the recipe's guidance for loosening it. The base should smell savory rather than scorched before the chicken is added.
Protect the ground spices
Ground spices can burn quickly on a dry hot surface. Follow the recipe's order and timing, with liquid or other ingredients ready when needed. Stir across the bottom and do not walk away during this stage. More spice does not repair a bitter base. If using a prepared curry blend, check its salt and chile content before adding separate seasoning.

Finish the chicken and sauce together
Simmer as directed and check the chicken's safe doneness independently of how thick the sauce appears. If the chicken is done before the gravy reaches your preferred consistency, follow a controlled finishing approach rather than boiling everything aggressively. Serve with plain rice or bread. The external recipe provides precise measurements; these notes focus on developing the base without burning it.
COOK IT AT HOME
Tomato and yogurt chicken curry
This onion-based curry builds depth before liquid enters the pan. The yogurt is added over reduced heat so it blends into the tomato sauce, and chicken thighs stay juicy during a gentle simmer. It is a home-style spiced curry, with room to adjust heat, rather than a claim to one regional restaurant recipe.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.
Ingredients
- 1½ lb boneless skinless chicken thighs, cut into 1½-inch pieces
- 2 tablespoons neutral oil
- 1 large onion, finely diced
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon turmeric
- ½ teaspoon mild chili powder
- 1 can diced tomatoes (14.5 oz)
- ½ cup plain whole-milk yogurt
- ½ cup water
- ¾ teaspoon fine salt
- 1 teaspoon garam masala
- 2 tablespoons chopped cilantro
Step-by-step method
- Warm oil in a heavy pot over medium heat. Add onion and cook 12–15 minutes, stirring frequently, until deep golden; lower the heat if the edges blacken.
- Add garlic and ginger and cook 1 minute. Stir in coriander, cumin, turmeric and chili powder for 20 seconds, then immediately add tomatoes with their juices.
- Simmer 8 minutes, stirring and crushing tomato pieces, until the mixture thickens. Reduce heat to low. Stir yogurt until smooth and add it a tablespoon at a time, stirring between additions.
- Add chicken, water and salt. Bring to a gentle simmer, partially cover and cook 15–20 minutes, stirring occasionally, until chicken reaches 165°F in its thickest pieces.
- Uncover and simmer a few minutes if the sauce is watery. Stir in garam masala and cook 1 minute. Take off heat and add cilantro.
- Taste the sauce with a piece of chicken before adjusting salt. Spoon into bowls while the sauce is hot and coats the meat.
Helpful tips & substitutions
- Use whole-milk yogurt rather than fat-free yogurt for a more stable sauce.
- For a milder version omit chili powder; coriander, cumin and ginger still provide flavor.
Storage & make-ahead
Refrigerate within 2 hours in shallow containers and use within 3–4 days. Reheat to 165°F, adding a splash of water if thick. Freeze up to 2 months.
