Grilled whole chicken for a shared home dinner

Flattening a whole chicken helps the breast and legs cook more evenly and makes indirect grilling easier to manage. This recipe is for the chicken itself, matching the whole-chicken option without assuming unlisted restaurant sides. Serve it alone or with separately prepared rice, salad and dips for a family table. Home cooking time depends on bird size and grill temperature, so the thermometer matters more than a menu estimate.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 1 whole chicken, 4–4½ lb, giblets removed
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon finely grated lemon zest
  • 5 garlic cloves, minced
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1½ teaspoons fine salt
  • ½ teaspoon black pepper
  • 1 lemon, cut into wedges
  • 2 tablespoons chopped parsley

Step-by-step method

  1. Ask the butcher to spatchcock the chicken, or place it breast-side down on a dedicated board and use strong poultry shears to cut along both sides of the backbone. Turn over and press firmly on the breastbone to flatten. Do not rinse raw poultry; pat dry with paper towels and clean the work area thoroughly.
  2. Mix oil, lemon juice, zest, garlic, paprika, cumin, coriander, salt and pepper. Rub over chicken and carefully under loose breast skin. Cover and refrigerate 2–12 hours. Keep the raw bird below ready-to-eat foods in the refrigerator.
  3. Prepare a grill with a direct hot zone and an indirect zone, aiming for a covered temperature around 375–400°F. On gas, light burners on one side; on charcoal, bank coals to one side. Place a drip pan beneath the indirect area if practical.
  4. Lay chicken skin-side up over indirect heat, legs toward the hotter side. Close the lid and cook about 45–60 minutes, rotating the bird once if one side colors faster. Avoid repeatedly lifting the lid.
  5. Check the thickest breast, innermost thigh and wing joint without touching bone. All must reach at least 165°F. If the skin needs more color, move briefly over direct heat skin-side down for 2–4 minutes, watching closely for flare-ups. Return to indirect heat if any thick area still needs cooking.
  6. Transfer to a clean board and rest 10 minutes. Separate legs, thighs, wings and breast portions with a clean knife. Scatter parsley and serve lemon wedges alongside.

Helpful tips & substitutions

  • Keep a cooler zone available; flare-ups should be handled by moving the food, not by letting the skin burn.
  • For oven cooking, roast the flattened bird at 425°F for roughly 45–60 minutes and verify the same 165°F endpoints.
  • Do not use marinade that touched raw chicken as a finishing sauce.

Storage & make-ahead

Carve leftovers into smaller portions and refrigerate in shallow containers within 2 hours, or within 1 hour above 90°F. Use within 3–4 days and reheat to 165°F. Freeze cooked meat for up to 2 months.

How to serve it

Add a separately cooked rice pilaf, chopped salad and prepared garlic sauce if making a larger family meal.
