Hummus bowls topped with skillet beef shawarma

A generous hummus base turns thin slices of warmly spiced beef into a scoopable main dish. The contrast works best when the beef is hot and the hummus is cool or just tempered, not simmered together. This complete home recipe uses prepared hummus as a named ingredient and includes a simple tahini drizzle, making it practical without pretending to reproduce the restaurant’s preparation.

Ingredients

  • 1¼ lb beef sirloin, thinly sliced across the grain
  • 2 tablespoons olive oil, divided
  • 3 tablespoons lemon juice, divided
  • 3 garlic cloves, minced, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cinnamon
  • ¾ teaspoon fine salt, divided
  • ¼ teaspoon black pepper
  • 2 cups prepared hummus
  • ¼ cup tahini
  • 3 tablespoons cold water
  • 2 tablespoons chopped parsley
  • 4 pita breads, optional for serving

Step-by-step method

  1. Combine sliced beef with 1 tablespoon oil, 1 tablespoon lemon juice, 2 garlic cloves, cumin, paprika, coriander, cinnamon, ½ teaspoon salt and pepper. Cover and refrigerate 1–4 hours.
  2. Whisk tahini with remaining lemon juice, remaining garlic and ¼ teaspoon salt. Add cold water a tablespoon at a time, stirring through the initial thickening until it becomes a smooth ribbon. Keep refrigerated until serving.
  3. Spread ½ cup hummus in each of four shallow bowls, making a broad well in the middle. Take only these serving portions from refrigeration shortly before the beef is ready; keep the main container cold.
  4. Heat a wide heavy skillet over medium-high heat and add remaining oil. Cook beef in two or three uncrowded batches, lifting it from excess marinade. Brown for about 2–3 minutes per side and verify the thickest strips reach at least 145°F.
  5. Rest cooked beef on a clean plate for at least 3 minutes. Discard leftover raw marinade. If the skillet has browned juices but no burned spices, add 1 tablespoon water and scrape briefly, then spoon the cooked juices over the beef.
  6. Pile beef into the hummus wells without covering every edge. Drizzle with tahini sauce and scatter parsley. If using pita, warm it briefly in a dry pan and tear into wedges for scooping. Serve immediately rather than leaving the assembled bowls warm on a buffet.

Helpful tips & substitutions

  • A wide bowl gives a better ratio of beef to hummus in each bite than a deep narrow one.
  • Stir prepared hummus before measuring if liquid has separated.
  • Avoid a strongly salted marinade because both hummus and tahini sauce already contribute seasoning.

Storage & make-ahead

Refrigerate components separately within 2 hours. Use cooked beef within 3–4 days and follow the hummus manufacturer’s shorter storage limit if stated. Reheat beef to 165°F before topping a fresh portion of cold hummus.

How to serve it

Cucumber sticks or a crisp cabbage salad provide a refreshing side without another starch.
