COOK IT AT HOME

Chicken shawarma salad bowls with cabbage and fattoush

This salad-based chicken meal keeps the cabbage separate from the bread-topped fattoush until plating. That small detail protects both textures and makes the dish easier to pack ahead. The chicken is roasted in a home oven, then sliced after reaching its safe temperature; the recipe includes garlic sauce and pita but does not add rice or potatoes to a menu bowl that does not list them.

Ingredients

  • 1½ lb boneless skinless chicken thighs
  • 5 tablespoons olive oil, divided
  • 5 tablespoons lemon juice, divided
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon fine salt, divided
  • ¼ teaspoon black pepper
  • 3 cups finely shredded cabbage
  • 4 cups chopped romaine
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • ¼ cup chopped parsley
  • 1 teaspoon sumac
  • ½ cup prepared garlic sauce (toum)
  • 5 small pita breads

Step-by-step method

  1. Coat chicken with 1 tablespoon oil, 1 tablespoon lemon juice, garlic, cumin, paprika, coriander, cinnamon, ½ teaspoon salt and pepper. Cover and refrigerate 2–12 hours.
  2. Heat oven to 425°F. Spread chicken on a rimmed tray without overlap and roast 20–25 minutes, checking the thickest parts reach 165°F. Rest on a clean board 5 minutes, then slice. Discard raw marinade and wash tools before handling ready-to-eat food.
  3. While chicken cooks, tear one pita into small pieces. Toss with 1 tablespoon oil and bake on a separate tray for 4–6 minutes, checking closely because the hot oven browns it quickly. Cool uncovered.
  4. Toss cabbage with 1 tablespoon oil, 1 tablespoon lemon juice and ⅛ teaspoon salt. Mix romaine, cucumber, tomato and parsley in a separate bowl.
  5. Whisk remaining 2 tablespoons oil and 3 tablespoons lemon juice with sumac and remaining ⅜ teaspoon salt. Add to the romaine mixture with toasted pita just before serving, tossing lightly.
  6. Warm the four remaining pitas in a dry skillet. Divide cabbage and fattoush between four bowls, arrange sliced chicken over the salads and add 2 tablespoons toum per serving. Serve immediately with warm pita alongside.

Helpful tips & substitutions

  • For meal prep pack toasted pita, dressing, sauce, chicken and vegetables separately, then combine at mealtime.
  • Use a wide chicken tray; overlapping thighs steam and take longer to reach 165°F.
  • If making the salad ahead, pat washed greens dry so the dressing does not become diluted.

Storage & make-ahead

Refrigerate chicken within 2 hours and use within 3–4 days; reheat to 165°F if serving hot. Keep cut vegetables and toum refrigerated in separate containers, and use dressed salad the same day.

How to serve it

Fresh radishes or cucumber spears make an easy extra crunch without changing the salad-based character.
