A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 300 g kataifi pastry, thawed according to its package
  • 120 g ghee, melted, plus 5 g for the pan
  • 180 g unsalted pistachios, finely chopped
  • 180 g granulated sugar
  • 120 ml water
  • 1 teaspoon lemon juice
  • 1 teaspoon orange-blossom water

Step-by-step method

  1. Combine sugar, water and lemon juice in a small saucepan. Bring to a gentle boil, stirring until sugar dissolves, then simmer for 5 minutes. Remove from heat, add orange-blossom water and set aside to cool. Measure 2 tablespoons of this syrup into the chopped pistachios and mix until lightly sticky.
  2. Grease a 20 cm square metal pan with 5 g ghee. Loosen the kataifi, cut strands to roughly 2 cm lengths and toss very thoroughly with 120 g melted ghee. Every part should feel lightly coated rather than having pools of fat in one place.
  3. Press half the pastry firmly into the base. Spread pistachios evenly over it, stopping a few millimeters short of the edge, and cover with the remaining pastry. Press level with parchment and a second flat pan or plate weighted by an unopened food can. Leave at cool room temperature for 1 hour, then remove the weight and parchment.
  4. Heat the oven to 325°F/160°C. Bake on the middle rack for 20–25 minutes until the strands are set and the edges only faintly golden. Check at 20 minutes; cover loosely with foil if the top begins to brown. This pale style should still be properly baked, not wet raw pastry.
  5. Place the pan on a heatproof surface and spoon the remaining cooled syrup evenly over the hot pastry. Allow at least 2 hours for absorption and cooling before cutting into 16 squares with a sharp knife. Keep the pan uncovered until fully cool to avoid condensation.

Helpful tips & substitutions

  • Fine, fresh-tasting pistachios make a clear filling layer; processing them into oily nut butter would change the texture.
  • Pressing is essential for clean portions. If a warm piece falls apart, let the tray cool completely before cutting again rather than adding more syrup.

Storage & make-ahead

Keep fully cooled squares airtight in a cool room for up to 3 days, or refrigerate for up to 1 week. Bring refrigerated pieces toward room temperature before serving; the strands soften gradually in storage.

How to serve it

Serve a small square with plain coffee. For a mixed homemade sweets tray, combine it with a separately prepared date maamoul or a coconut cookie and label nut allergens clearly.
