Twice-Cooked Crisp French Fries
A soft potato center and crisp exterior come from two distinct frying stages. The first cooks the potato gently; the second browns and crisps it. This recipe starts with fresh russet potatoes and includes soaking and careful drying. The drying step is essential around hot oil. Use a thermometer and a suitable heavy pot or fryer rather than guessing oil temperature from smoke.

Ingredients
- 2 pounds/900 g russet potatoes
- 2 quarts cold water for soaking
- 1 1/2 quarts neutral frying oil, adjusted to a safe 2-inch depth
- 3/4 teaspoon fine salt
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
Step-by-step method
- Peel potatoes if desired and cut into even 1/3-inch sticks. Soak in cold water for 30 minutes, then drain and rinse. Dry thoroughly with clean towels; there should be no visible surface water.
- Heat oil to 300°F/150°C in a heavy pot no more than half full, or use a fryer according to its instructions. Lower a small batch of potatoes carefully into the oil. Cook for 5–7 minutes until flexible and tender but not browned.
- Lift onto a rack set over a tray and repeat with remaining potatoes, allowing the oil to recover between batches. Let all first-cooked fries cool for 15 minutes.
- Increase oil temperature to 375°F/190°C. Fry potatoes again in small batches for 2–4 minutes until crisp and golden. Drain on the rack rather than piling them in a deep bowl.
- Mix salt, paprika, and garlic powder. Sprinkle over the hot fries and toss gently. Serve immediately. Turn off the heat and let oil cool completely before moving or straining it.
Helpful tips & substitutions
- Keep cut thickness consistent so no batch contains both thin burnt pieces and thick undercooked ones.
- Do not cover hot fries while waiting; trapped steam softens the crust. If needed, hold briefly in a single layer in a 200°F oven.
Storage & make-ahead
Refrigerate leftovers at 40°F or below within 2 hours and use within 3 days. Reheat spread out in a 425°F oven to 165°F. Freshly fried texture is best on the first serving.
How to serve it
Pair with wraps, burgers, or a small bowl of garlic sauce. Add sauce at the table instead of pouring it over the whole batch.
