Chicken Shawarma Wraps with Toum and Pickles

Chicken shawarma wraps need seasoned meat, browned edges, flexible bread, and a simple contrast of garlic sauce and pickles. This home method uses an oven rather than a vertical rotisserie. Chicken thighs stay forgiving during roasting, and a short final broil adds color. The garlic sauce may be purchased refrigerated; the chicken seasoning, cooking, and complete assembly are provided here.

Ingredients

  • 1 1/2 pounds/680 g boneless skinless chicken thighs
  • 3 tablespoons plain yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 3/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 4 large thin pita or flatbreads
  • 1/2 cup prepared refrigerated toum garlic sauce
  • 3/4 cup drained sliced cucumber pickles

Step-by-step method

  1. Mix yogurt, oil, lemon juice, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper in a bowl. Coat the chicken thoroughly, cover, and refrigerate for 2 hours at 40°F or below.
  2. Heat the oven to 425°F/220°C. Arrange chicken in one layer on a rimmed metal tray, leaving gaps. Discard remaining raw marinade. Roast for 20–25 minutes until the thickest pieces reach 165°F.
  3. If needed, broil for 1–2 minutes while watching closely to deepen the edges. Rest for 5 minutes, then slice thinly across the grain. Keep all resting juices with the cooked meat if they are not watery.
  4. Warm each flatbread briefly in a dry skillet until flexible. Spread 2 tablespoons garlic sauce down the center of each. Divide chicken and well-drained pickles evenly over the sauce.
  5. Fold in the lower edge, tuck in the sides, and roll snugly. Place seam side down in a dry skillet over medium heat for about 1 minute to secure the wrap. Serve immediately.

Helpful tips & substitutions

  • Warm bread bends without splitting; cold stiff pita often tears around a generous filling.
  • Drain pickles well and avoid pouring tray liquid directly into the bread. Serve any extra juices separately to preserve the wrap.

Storage & make-ahead

Refrigerate chicken at 40°F or below within 2 hours and use within 3 days. Store sauce, pickles, and bread separately. Reheat chicken to 165°F before assembling; follow the toum label’s storage directions.

How to serve it

Serve with garlic potatoes and a cucumber salad. For a lighter meal, use a smaller bread and offer extra vegetables on the side.
