Tahini cookies: stir the jar before measuring the dough
Use evenly mixed sesame paste and consistent portions for cookies with a clear nutty flavor.
Start with plain tahini
Tahini separates naturally, leaving oil above a thicker paste. Stir the jar thoroughly before measuring so one batch does not receive mostly oil and another mostly solids. Choose plain sesame paste rather than a sweet sesame spread or prepared tahini sauce. Read the recipe’s flour and sweetener requirements too; tahini-cookie formulas can differ substantially from one another.
Mix to the intended consistency
Combine the ingredients in the order specified and scrape the bowl to distribute the tahini evenly. A dough that seems soft may need a rest or chill rather than extra flour. Follow the recipe’s guidance before adjusting. If using almond flour, do not assume wheat flour will behave identically; the structure and spread of the cookies will change.

Portion evenly and leave space
Use a small scoop or measured spoon to create similar portions. Consistent size matters because the edges can brown while a thick center remains very soft. Flatten only as directed and arrange with room for spreading. If adding sesame seeds, press gently enough that they adhere without turning the dough into an irregular thin sheet.
Let fragile cookies set
Warm cookies can be delicate even when baked correctly. Give them the stated cooling time before lifting or stacking. Serve a small plate beside tea, keeping the sesame identity clear for guests. On the market list, specify plain tahini and the exact flour in the recipe. Check the recipe card for quantities rather than treating the shopping suggestions as a complete formula.
COOK IT AT HOME
Tahini and Sesame Cookies
Tahini needs thorough stirring before it is measured for cookies. Oil at the top and dense sesame paste at the bottom produce very different doughs. These cookies use butter for structure and tahini for flavor, with a short chill to make shaping easier. They are gently pressed rather than rolled very thin, creating crisp edges and a tender center.

Ingredients
- 115 g unsalted butter, softened
- 120 g granulated sugar
- 120 g well-stirred tahini
- 1 large egg
- 1 teaspoon vanilla extract
- 220 g all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine salt
- 35 g sesame seeds
Step-by-step method
- Beat the softened butter and sugar in a bowl for 2–3 minutes, until creamy. Add the stirred tahini and mix until uniform. Beat in the egg and vanilla, scraping the bottom of the bowl so no dense paste remains.
- Whisk the flour, baking powder and salt separately. Add to the butter mixture and stir just until a soft dough forms. Cover and refrigerate for 30 minutes; this allows the dough to firm without adding unnecessary flour.
- Heat the oven to 350°F/175°C. Line two baking sheets with parchment. Divide the dough into 24 equal balls, approximately 25 g each. Put the sesame in a shallow bowl and press the top of each ball into it.
- Set the balls 5 cm/2 inches apart and flatten gently to about 1 cm/3/8 inch thick. Bake for 12–14 minutes, rotating trays if necessary, until the edges are pale golden. The centers can look slightly soft but should not look wet.
- Leave the cookies on their trays for 10 minutes so they firm up, then transfer carefully to a rack. Cool completely before stacking. Baking them until deeply brown will give a drier, more bitter sesame flavor.
Helpful tips & substitutions
- This recipe uses plain tahini, not sweetened sesame spread. Stir the whole jar first, including the compact paste at the bottom.
- For an orange variation, replace the vanilla with 1 teaspoon finely grated orange zest. Keep the liquid and flour measurements unchanged.
Storage & make-ahead
Store cooled cookies in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 2 months. Separate layers with parchment to protect the sesame topping.
How to serve it
Serve with coffee or mint tea. Fresh orange segments provide a bright contrast to the buttery sesame crumb.
