Spinach stew: a full-flavored pot without excess water
Control moisture from frozen or fresh spinach and finish a savory stew with a balanced touch of lemon.
Choose spinach for the recipe
Fresh and frozen spinach can both be useful, but their volumes and moisture differ. Follow a recipe written for the form you buy. A large bag of fresh leaves collapses dramatically, while frozen spinach begins much more compact. Check whether frozen leaves are chopped or whole and whether the package includes any added seasoning or sauce.
Build flavor before adding greens
Prepare onions, garlic and spices so the base has time to develop before spinach releases its liquid. If the recipe includes meat, follow its browning and cooking stages rather than adding everything at once. Break up clumps for an even texture. Keep an eye on the pan bottom; flavorful browning is useful, but burned bits can dominate a mild vegetable.
Adjust liquid after the spinach settles
Wait until the leaves have wilted or thawed fully before deciding the stew needs more water. Stir gently and let the recipe’s simmer develop the desired consistency. If the pot is too thin, reduce carefully rather than adding a thickener that changes the dish. Taste before adding lemon, then make small adjustments so the greens remain recognizable beneath the acidity.

Make a simple plate around it
Plain rice provides structure beside the soft spinach, and a fresh vegetable side adds crunch. Spoon the stew evenly so each serving contains both greens and any meat. For shopping, select plain frozen spinach when the recipe calls for it, not a creamed preparation. Keep garlic and coriander on the list even if the pantry already contains a generic mixed seasoning.
COOK IT AT HOME
Spinach and chickpea stew with lemon
This meat-free spinach stew uses chickpeas for substance and a small amount of tomato paste for depth. Frozen spinach is practical when fresh leaves would take several large bags, but excess thawing liquid should be squeezed away. Lemon enters at the end so the finished bowl stays bright rather than tasting only of cooked greens.

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- 1 lb frozen chopped spinach, thawed and squeezed
- 2 cans chickpeas (15 oz each), drained and rinsed
- 1½ cups low-sodium vegetable broth
- ½ teaspoon fine salt
- ¼ teaspoon black pepper
- 2 tablespoons lemon juice
- 2 tablespoons chopped cilantro
Step-by-step method
- Heat oil in a saucepan over medium heat. Cook onion 7–8 minutes until soft. Add garlic and stir 30 seconds.
- Add tomato paste, coriander and cumin. Cook 1 minute, stirring so the paste coats the onion without scorching.
- Pull squeezed spinach apart with clean hands and add to the pot. Stir for 2 minutes to combine it with the aromatic base.
- Add chickpeas, broth, salt and pepper. Bring to a simmer, partially cover and cook 12–15 minutes until spinach is tender and the broth lightly coats the beans.
- If watery, uncover for the final 3 minutes. If too dry, add hot water 2 tablespoons at a time. Mash a few chickpeas against the pot if you want more body.
- Remove from heat and stir in lemon juice and cilantro. Taste and serve hot in shallow bowls.
Helpful tips & substitutions
- For fresh spinach, use about 2 lb washed leaves, wilt in batches, then chop before adding chickpeas.
- Do not squeeze spinach bone-dry into a compact block; loosen it so it heats evenly.
Storage & make-ahead
Refrigerate within 2 hours for 3–4 days and reheat to 165°F. Freeze in meal-sized portions for up to 3 months.
How to serve it
Serve over rice or with warm pita and plain yogurt.
