Understand the coating

A shish tawook marinade coats the chicken with flavor; it should not become a thick blanket that slides off on the grill. Mix the marinade ingredients thoroughly before adding the meat so tomato paste, yogurt and spices are evenly distributed. Follow one recipe for the balance of acid and dairy rather than increasing both in the hope of faster tenderizing.

Choose a workable piece size

Cut chicken into pieces that can be threaded securely but are not so large that their centers lag behind the surface. Keep the dimensions consistent across the batch. Refrigerate during marinating and prepare vegetables with a clean board and knife. If using wooden skewers, follow the equipment guidance in your recipe and keep their exposed ends away from direct flames.

Give the surface a chance to brown

Let excess marinade drip off before cooking. Crowding the pan traps steam and makes browning harder, so work in batches when necessary. Turn when the surface releases rather than repeatedly pulling at a sticking piece. Check the thickest chicken with a food thermometer; attractive grill marks alone do not establish that the center is cooked.

Pair the skewers with something crisp

A simple cabbage or cucumber salad provides a useful contrast to warm, seasoned chicken. Offer garlic sauce or yogurt separately so the marinade remains noticeable. Warm pita can catch small pieces when the skewers are removed. Shop for tomato paste rather than a ready-made pasta sauce, and check spice blends for added salt before seasoning the whole batch.

COOK IT AT HOME

Yogurt-marinated shish tawook

Tomato paste, yogurt and garlic give these chicken skewers a different profile from a simple lemon-herb marinade. An overnight soak is optional; a few refrigerated hours are enough to coat the meat well. Let excess marinade drip away before cooking so the chicken browns instead of steaming beneath a thick wet layer.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 1½ lb boneless skinless chicken breast, cut into 1¼-inch cubes
  • ½ cup plain whole-milk yogurt
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ¾ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 1 green bell pepper, cut into squares
  • 1 small onion, cut into wedges

Step-by-step method

  1. Whisk yogurt, tomato paste, oil, lemon juice, garlic, paprika, cumin, salt and pepper in a bowl large enough for the chicken.
  2. Add chicken and stir until every piece is coated. Cover and refrigerate 2–12 hours. Do not leave poultry marinating on the counter.
  3. Heat oven to 425°F and line a rimmed tray with foil or parchment rated for that temperature. Thread chicken, pepper and onion onto metal skewers, allowing excess marinade to drip back into the bowl.
  4. Lay skewers across the tray with space between them. Roast for 15–20 minutes, turning halfway, until the thickest chicken reaches 165°F. Discard the remaining uncooked marinade.
  5. For more browning, use a foil-lined tray and broil briefly after the chicken is cooked, watching continuously so yogurt does not scorch. Do not place parchment under a broiler.
  6. Lift onto a clean platter with clean utensils and serve promptly. The chicken should be juicy inside with browned patches, not uniformly blackened.

Helpful tips & substitutions

  • Cut chicken breast evenly; small offcuts cook too quickly and dry out.
  • Chicken thighs can replace breast, but may need a few extra minutes. Always check temperature rather than relying only on time.

Storage & make-ahead

Refrigerate cooked skewers within 2 hours and use within 3–4 days. Reheat chicken to 165°F. Freeze cooked meat without vegetables for up to 2 months.

How to serve it

Serve with garlic sauce, pickles and a parsley-rich salad.
