Ricotta-style kunafa: choosing a soft filling and crisp shell
A soft ricotta-style kunafa filling behaves differently from a stretchy mozzarella center.
Treat the filling as its own preparation
A soft ricotta-style kunafa filling behaves differently from a stretchy mozzarella center. Read the recipe before selecting dairy, because moisture and texture determine how the filling sets. Do not replace one cheese with another merely because both are white. Drain or combine ingredients exactly as directed when trying this version for the first time.
Prepare the pastry evenly
Separate the shredded pastry gently after thawing according to its label. Work the butter through the strands so the base does not contain alternating dry and oily patches. Use an even thickness across the pan and pay particular attention to the corners. A thin exposed corner can brown long before the deeper center has finished cooking.

Keep the filling contained
Spread the filling in an even layer without pushing it against every exposed edge. Cover it with pastry as directed and avoid compacting one area much more firmly than another. Use the specified pan size on the first attempt. A smaller pan makes a deeper dessert, which changes both the baking time and the balance of shell to filling.
Give the dessert a serving plan
Have syrup ready before the kunafa leaves the oven and follow the recipe's guidance on temperature and absorption. Allow the filling to settle enough for neat portions rather than cutting immediately out of impatience. Serve small pieces with additional syrup offered separately if appropriate. COOK IT AT HOME
Ricotta and Semolina Kunafa Squares
This kunafa variation uses a soft ricotta filling thickened with a small amount of cooked semolina custard. It gives a creamy center rather than the stretchy texture of an all-mozzarella version. Draining the ricotta and cooling the custard are essential: warm, wet filling can soak the pastry before it browns. The recipe is a home-style adaptation and is best served warm in modest squares.

Ingredients
- 12 ounces/340 g kataifi pastry, thawed
- 2/3 cup/150 g unsalted butter, melted
- 1 cup/250 g whole-milk ricotta
- 1 cup/240 ml whole milk
- 3 tablespoons fine semolina
- 1 tablespoon granulated sugar for filling
- 1 teaspoon vanilla extract
- 3/4 cup/150 g granulated sugar for syrup
- 1/2 cup/120 ml water
- 1 tablespoon fresh lemon juice
- 1 teaspoon rose water
- 2 tablespoons chopped pistachios
Step-by-step method
- Drain ricotta in a fine sieve in the refrigerator for 30 minutes. In a saucepan whisk milk, semolina, and 1 tablespoon sugar. Cook over medium-low heat, stirring, for 4–6 minutes until thick like soft pudding. Remove, stir in vanilla, and cool for 30 minutes before folding in ricotta.
- In another saucepan combine syrup sugar, water, and lemon juice. Simmer for 5 minutes after the sugar dissolves. Remove, stir in rose water, and cool.
- Heat the oven to 375°F/190°C. Brush an 8-inch square metal pan with 1 tablespoon melted butter. Cut kataifi into short strands and toss with the remaining butter.
- Press half the pastry into the pan. Spread the cooled ricotta filling evenly, leaving a 1/2-inch border. Cover with the remaining pastry and press very gently.
- Bake for 35–40 minutes until golden and crisp. Rest for 10 minutes, then spoon 1/2 cup cool syrup over the warm surface. Sprinkle with pistachios, cut into nine squares, and offer remaining syrup separately.
Helpful tips & substitutions
- Do not substitute very wet cottage cheese without draining and blending it first; the filling needs body to keep the layers distinct.
- If the top colors early, cover loosely with foil for the final part of baking. Let the bottom crust finish rather than removing the pan solely because the top looks brown.
Storage & make-ahead
Refrigerate at 40°F or below within 2 hours and use within 3 days. Reheat covered loosely in a 350°F oven until the center reaches 165°F; uncover briefly to refresh the crust.
How to serve it
Serve with unsweetened coffee or tea. A few fresh strawberries make a bright accompaniment to the creamy filling.
