Choose a loose grain texture

Millet can become soft and creamy or remain more distinct depending on the method and liquid. A salad needs the latter, so follow a recipe designed for grain salad rather than breakfast porridge. Measure the water carefully and allow the cooked millet to rest. Fluff gently and spread it out to cool before adding ingredients that you want to remain crisp or bright.

Prepare the pomegranate separately

Remove the seeds from the fruit and pick away pale membrane before they reach the bowl. Stray membrane adds an unpleasant bitter bite. Let excess juice drain if you have broken many seeds during preparation. Keeping the seeds whole preserves the little bursts of flavor and prevents the entire salad from becoming pink and wet before it is served.

Add herbs after cooling

Mint and other tender herbs should meet warm or cool grain rather than a cloud of steam. Chop them shortly before mixing for the freshest appearance. Add dressing gradually and turn the salad with a broad spoon instead of pressing through it. Taste a forkful containing grain, herb and pomegranate together; the fruit's acidity changes how much lemon the bowl actually needs.

Keep the additions purposeful

A few toasted nuts can bring crunch, but too many extras make the salad difficult to portion. Choose components with different roles rather than several versions of sweetness. Serve it beside a simple main dish or as one part of a shared lunch. The linked recipe gives a complete millet-and-pomegranate combination; if millet is unavailable locally, use a separate method appropriate to any replacement grain.

COOK IT AT HOME

Millet, Pomegranate and Herb Salad

Millet makes a light, gently nutty salad when the grains are cooked without excessive stirring. Toasting them briefly before adding water adds flavor, while a covered rest helps them finish evenly. Pomegranate seeds are folded in after the grain cools so their color and juicy texture stay distinct. This salad is suitable as a side or as the base of a lunch with beans or cheese.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 200 g dry millet
  • 450 ml water
  • 1/2 teaspoon fine salt, divided
  • 3 tablespoons olive oil, divided
  • 150 g pomegranate seeds
  • 1 small cucumber, diced
  • 2 scallions, finely sliced
  • 1/2 cup chopped parsley
  • 2 tablespoons chopped mint
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon black pepper
  • 30 g toasted pumpkin seeds

Step-by-step method

  1. Rinse the millet in a fine sieve and drain well. Heat 1 tablespoon olive oil in a saucepan over medium heat. Add the millet and stir for 2–3 minutes, until it smells lightly nutty; avoid dark browning.
  2. Add the water and 1/4 teaspoon salt carefully. Bring to a boil, cover and reduce to low. Cook for 18–20 minutes, or according to the package, until the water is absorbed and the grains are tender. Remove from the heat and rest covered for 10 minutes.
  3. Fluff gently with a fork and spread the millet in a shallow bowl to release steam for about 20 minutes. Do not stir repeatedly while hot, which can turn it into a softer porridge-like texture.
  4. Whisk the remaining 2 tablespoons oil, lemon juice, honey, remaining salt and pepper. Fold through the cooled millet. Add the cucumber, scallions, parsley and mint, then fold in the pomegranate seeds with only a few gentle turns.
  5. Scatter the pumpkin seeds over the salad just before serving. If making ahead, keep the seeds separate and refrigerate the grain mixture promptly rather than leaving it on the counter to develop flavor.

Helpful tips & substitutions

  • Use hulled millet intended for cooking, not a seed mixture. Package liquid ratios may vary, so follow the brand’s instructions if substantially different.
  • For a vegan version, use maple syrup instead of honey. Chickpeas can be served alongside for a more substantial meal without changing the grain preparation.

Storage & make-ahead

Refrigerate in a shallow covered container within 2 hours and use within 3 days. The cucumber softens gradually, so add it on the day of serving for the freshest texture. Keep pumpkin seeds separate. Keep refrigerated foods at 40°F/4°C or below.

How to serve it

Serve with grilled halloumi, chickpeas or roasted chicken. The juicy pomegranate makes a pleasant contrast to warm, lightly spiced mains.
