Fried Vegetable Wraps with Hummus and Tahini

The vegetarian sandwich brings cauliflower, eggplant, and zucchini together with hummus, tahini, fresh vegetables, and turnip pickles. Frying each vegetable separately gives better control because their water content and cooking times differ. Dry the vegetables carefully before they meet hot oil, and let them drain on a rack before assembly. This complete home version keeps the menu’s mix while giving clear quantities and timing.

Ingredients

  • 1 small eggplant, about 12 ounces/340 g, sliced 1/2 inch thick
  • 1 medium zucchini, sliced 1/2 inch thick
  • 2 cups small cauliflower florets
  • 3/4 teaspoon fine salt, divided
  • 3 cups neutral frying oil, or enough for a safe 2-inch depth
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 small garlic clove, grated
  • 3 tablespoons cold water
  • 4 large flatbreads
  • 1/2 cup prepared hummus
  • 1 tomato, sliced
  • 1/4 small onion, sliced
  • 1/4 cup parsley leaves
  • 1/2 cup drained pickled turnips

Step-by-step method

  1. Sprinkle eggplant with 1/2 teaspoon salt and stand in a colander for 15 minutes. Blot thoroughly. Wash and dry zucchini and cauliflower very well; water on the surface causes hot oil to splatter.
  2. Whisk tahini, lemon juice, garlic, cold water, and remaining 1/4 teaspoon salt until smooth. Refrigerate while cooking.
  3. Heat oil to 350°F/175°C in a heavy pot no more than half full. Fry cauliflower in small batches for 4–6 minutes until tender and golden. Fry zucchini for 2–3 minutes and eggplant for 3–4 minutes, turning as needed. Keep the vegetables in separate batches and let oil recover between them.
  4. Drain on a rack over a tray. Cut large cooked eggplant slices into strips once cool enough to handle. Warm flatbreads briefly in a dry skillet until flexible.
  5. Spread 2 tablespoons hummus on each bread. Divide all three fried vegetables among them, then add tomato, onion, parsley, and turnips. Drizzle with tahini sauce, fold the bottom and sides inward, and roll. Serve immediately.

Helpful tips & substitutions

  • Use small cauliflower florets so the stems soften before the outside becomes too dark.
  • For an oven variation, toss vegetables with 3 tablespoons olive oil and roast at 425°F on separate trays until tender, about 20–30 minutes. The result differs from the fried menu-style filling.

Storage & make-ahead

Refrigerate cooked vegetables and sauce at 40°F or below within 2 hours and use within 3 days. Reheat vegetables in an oven to 165°F and assemble fresh wraps. Do not keep garlic-containing sauce at room temperature.

How to serve it

A crisp cucumber salad or lentil soup makes a useful side. The wrap already contains both hummus and tahini, so additional creamy sauces are optional.
