Ingredients

  • 300 g kataifi pastry, thawed as directed
  • 125 g unsalted butter, melted, plus 5 g for pan
  • 150 g unsalted pistachios for filling, chopped
  • 40 g unsalted pistachios for topping, finely chopped
  • 1/4 teaspoon ground cardamom
  • 220 g granulated sugar
  • 160 ml water
  • 1 teaspoon lemon juice
  • 1 teaspoon rose water

Step-by-step method

  1. Combine sugar, water and lemon juice in a small saucepan. Bring to a gentle boil, stirring until dissolved, then simmer for 5 minutes. Remove from heat, add rose water and let cool. Keep syrup away from the pastry until after baking.
  2. Heat the oven to 350°F/175°C. Grease a 23 cm square metal pan with 5 g butter. Separate kataifi strands thoroughly, cut excessively long tangles into lengths about 5 cm and toss with 125 g melted butter until evenly coated.
  3. Press half the strands firmly over the pan base. Combine filling pistachios with cardamom, scatter evenly over the pastry and cover with remaining strands. Press the top flat with a clean spatula so the tray slices neatly later, without crushing it into a solid paste.
  4. Bake for 40–45 minutes until the surface is deep golden and the edges look crisp. Rotate once if needed. If the top browns before the lower layers, cover loosely with foil for the final 10 minutes; a metal pan helps the bottom color.
  5. Place the hot tray on a heatproof surface and spoon cooled syrup across it in three passes, pausing briefly between additions. Sprinkle all 40 g topping pistachios over the surface. Leave uncovered for at least 2 hours to cool and absorb the syrup.
  6. Cut into 16 squares with a sharp knife, pressing through the strands instead of dragging the top layer sideways. Lift with a flat server. Serve at room temperature for a contrast between crisp strands and syrup-softened interior.

Helpful tips & substitutions

  • Kataifi dough and dried vermicelli noodles are different products. Use the pastry labeled for baking this dessert, thawed according to the package.
  • The topping nuts are separate from the filling quantity. Adding them after baking preserves their color and avoids scorched exposed pieces.

Storage & make-ahead

Store cooled pieces covered in a cool room for up to 3 days, or refrigerate for up to 1 week if the room is warm. Expect the pastry to soften gradually; do not seal the tray while it is still steaming.

How to serve it

Serve small portions with black tea. If offering cream alongside, keep it refrigerated separately and add it only to portions being eaten.
