Jallab from syrup: getting dilution right for a pitcher
Read the concentrate label and account for ice before making a large batch of jallab.
Identify concentrate versus ready-to-drink
A bottle labeled jallab may be a concentrated syrup or a drink that is already diluted. Check the instructions before mixing a pitcher. Starting with the wrong assumption can produce something far too sweet or almost flavorless. Use the package ratio as an initial guide when the recipe allows, then taste a small sample before scaling up.
Mix a single glass first
Prepare one measured glass with the water and ice you plan to use. This makes it easier to adjust without committing the entire bottle. Taste after the ice has begun to cool the drink, since temperature and dilution affect the impression of sweetness. Write down the successful ratio so a larger batch can be repeated accurately.
Separate the garnish from the liquid
Nuts and raisins contribute a second texture and should not be confused with ingredients that dissolve into the syrup. Set them out separately if guests have different preferences. A small spoon helps with the garnish at the bottom of the glass. Avoid adding extra rose water automatically, because some concentrates already contain a pronounced floral flavor.

Prepare a practical serving station
Use a pitcher with enough space to stir without spilling and provide ice separately for a longer gathering. Label the drink and any nut garnish clearly. Keep water available beside it so guests can choose a lighter serving. When shopping, note the bottle size and dilution directions rather than comparing concentrates and ready-to-drink products only by their shelf volume.
COOK IT AT HOME
A Balanced Pitcher of Bottled Jallab
Bottled jallab is convenient, but different brands concentrate their syrups differently. This recipe gives a starting ratio and a practical way to adjust it without making a whole pitcher excessively sweet. Check the bottle directions first; if they specify a substantially different dilution, follow that concentration and use the same chilled-pitcher method. The garnish belongs in the glasses so it stays pleasantly textured.

Ingredients
- 120 ml jallab syrup, or the label amount for 900 ml prepared drink
- 780 ml cold water, adjusted if the label requires a different syrup amount
- 1 tablespoon lemon juice
- 12 ice cubes
- 3 tablespoons pine nuts
- 3 tablespoons golden raisins
Step-by-step method
- Read the syrup label and confirm that it is a concentrate intended to be diluted. Measure the syrup into a pitcher. Add half the water and stir until the thick syrup no longer clings to the bottom.
- Add the remaining water and lemon juice. Stir thoroughly. Taste a small serving over one of the measured ice cubes so you judge it at the temperature and dilution in which it will be served. Avoid adding more concentrate simply because the undiluted flavor seems unfamiliar.
- Cover and chill for at least 1 hour. Meanwhile, check the raisins for stems and keep them in a separate bowl. The pine nuts can be used plain if sold ready to eat; this version deliberately avoids toasted flavor.
- Stir the pitcher immediately before pouring. Divide the remaining ice between six glasses, pour in the jallab and give each glass 1/2 tablespoon pine nuts and 1/2 tablespoon raisins. Provide a spoon so guests can enjoy the garnish after drinking.
Helpful tips & substitutions
- If the bottle directions call for a 1:5 ratio, for example, use 150 ml syrup and 750 ml water for 900 ml prepared drink. Ratios describe syrup to water, not syrup to total liquid.
- For a clear drink without floating garnish, serve the nuts and raisins in a separate small dish rather than blending them into the pitcher.
Storage & make-ahead
Refrigerate the mixed drink without ice or garnish for up to 2 days, or less if the syrup label specifies a shorter period. Store the opened concentrate according to its own label. Keep refrigerated foods at 40°F/4°C or below.
How to serve it
Pour modest glasses alongside savory manakish, cheese pies or an afternoon snack. The drink is sweetened, so it need not accompany a very sweet dessert.
