Choose the couscous format

Small couscous and pearl couscous require different cooking methods, so read the package and the recipe together. Hydrate or cook it as directed, then loosen the grains before adding vegetables. A tightly packed hot mound can become clumpy as it cools. Use a broad bowl so steam escapes without forcing you to stir aggressively.

Prepare the salad before the cheese

Wash and dry the herbs, cut the vegetables and mix the dressing while the couscous rests. Halloumi is most pleasant when it has just been cooked and is still warm. If you fry it first and then begin chopping everything else, the cheese may become firmer before the rest of the meal is ready.

Dry the halloumi surface

Pat the cheese dry and cut even slices or cubes. A wet surface can spit in the pan and delay browning. Give the pieces space and turn them when they have formed a colored surface rather than moving them constantly. Taste a cooked piece before adding salt to the salad, because the cheese may supply enough on its own.

Combine without losing texture

Fold dressing through the couscous and vegetables, then place the warm cheese on top or stir it in gently. Add tender herbs near the end so they remain recognizable. Keep extra dressing available rather than soaking the bowl. The outside recipe offers one herb-and-couscous combination; use its quantities as a guide while matching the actual couscous type you purchased.

COOK IT AT HOME

Golden Halloumi and Lemon Couscous Salad

Halloumi is most enjoyable while its surface is golden and its center is still warm. The rest of this salad is prepared first so the cheese can go directly from the skillet to the bowl. Instant couscous provides a quick grain base, with cucumber, parsley, and lemon adding freshness. This recipe uses standard small-grain instant couscous, not pearl couscous, which requires a different cooking method.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 1 cup/170 g instant couscous
  • 1 cup/240 ml boiling water
  • 1/4 teaspoon fine salt
  • 3 tablespoons olive oil, divided
  • 8 ounces/225 g halloumi, sliced 1/2 inch thick
  • 1/2 English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped mint
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon ground black pepper

Step-by-step method

  1. Place couscous and salt in a heatproof bowl. Add the boiling water and 1 tablespoon olive oil, stir once, cover tightly, and leave for 5 minutes. Fluff with a fork and spread slightly to release steam.
  2. Whisk lemon juice, 1 tablespoon olive oil, and pepper in a large bowl. Add the cucumber, tomatoes, parsley, and mint. Fold in the warm or room-temperature couscous without crushing the grains.
  3. Pat the halloumi slices dry. Heat the remaining tablespoon olive oil in a nonstick skillet over medium-high heat. Add the cheese in one layer, leaving space between pieces.
  4. Cook for 1–2 minutes per side until golden brown. Turn only after the first side has developed a crust; repeated moving can tear the surface.
  5. Divide the couscous salad among four plates and top with the hot halloumi. Serve immediately, tasting before adding any additional salt because the cheese is already salty.

Helpful tips & substitutions

  • If the couscous package specifies a different liquid ratio, follow it; brands vary in how much liquid their precooked grains absorb.
  • For a lunch prepared ahead, keep the salad cold and cook the halloumi just before serving. Chilled cooked halloumi is safe when stored correctly but noticeably firmer.

Storage & make-ahead

Refrigerate leftovers at 40°F or below within 2 hours and use within 3 days. Reheat cheese separately to 165°F if serving leftovers hot; the cucumber salad is better kept cool.

How to serve it

The salad can be a vegetarian main or a side for grilled chicken. Offer lemon wedges separately if diners prefer a sharper finish.
