Chicken skewers with cucumber yogurt: a two-part prep plan
Prepare the cold sauce first and leave grilling for last when serving chicken skewers with cucumber yogurt.
Treat the sauce as its own dish
A cucumber-yogurt sauce has a different job from the chicken marinade. Make it in a clean bowl with separate utensils before handling raw poultry. Drain grated cucumber well so the sauce stays spoonable instead of turning into a puddle. Taste the yogurt before adding lemon: some varieties are already quite tart and need less extra acidity.
Cut for consistent cooking
Pieces of chicken that vary greatly in size will not finish together. Trim and cut them before marinating, then thread with a little space for heat to reach the surfaces. Keep the marinade refrigerated for the recipe’s recommended time. Do not use leftover raw-poultry marinade as a table sauce; the prepared cucumber yogurt supplies that finishing role.
Time the hot and cold components
Keep the yogurt sauce chilled while the skewers cook. Turn chicken with tongs and use a food thermometer in a substantial piece to check doneness. The color of a spice coating can make undercooked chicken look ready. Warm bread near the end so it reaches the table soft, and set out plates before removing the skewers from the heat.
Offer a balanced build-your-own plate
Serve chicken, yogurt sauce, cucumber slices and bread in separate areas. This lets guests control the amount of sauce and prevents the bread from becoming soggy. A shallow sauce bowl is easier to spoon from than a tall jar. On the grocery list, distinguish plain unsweetened yogurt from flavored yogurt, and buy a bread size that suits individual wraps or shared dipping.

Lemon chicken skewers with cucumber yogurt
These skewers use a lemon-and-oregano marinade and a separate cucumber yogurt, keeping the cold sauce away from raw poultry. Similar-sized thigh pieces stay juicy and cook evenly. Make the sauce first with clean utensils, refrigerate it, and then turn to the chicken so the two preparation streams remain separate.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.
Ingredients
- 1½ lb boneless skinless chicken thighs, cut into 1¼-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons lemon juice, divided
- 2 garlic cloves, minced, divided
- 1 teaspoon dried oregano
- ¾ teaspoon fine salt, divided
- ¼ teaspoon black pepper
- 1 cup plain Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tablespoon chopped mint
- 1 tablespoon cold water
- 1 red bell pepper, cut into 1¼-inch squares
Step-by-step method
- Make the sauce in a clean bowl: mix yogurt, squeezed cucumber, half the lemon juice, half the garlic, ¼ teaspoon salt, mint and water. Cover and refrigerate.
- In a separate bowl, combine chicken with oil, remaining lemon juice and garlic, oregano, remaining salt and pepper. Refrigerate 30 minutes. Soak wooden skewers in water during this time, or use metal skewers.
- Heat grill to medium-high. Thread chicken and pepper onto skewers, leaving tiny gaps rather than compressing the pieces tightly.
- Grill for 10–15 minutes, turning every 3–4 minutes, until lightly charred and the thickest chicken pieces reach 165°F. Move skewers away from flare-ups; color alone does not prove doneness.
- Transfer with clean tongs to a clean serving plate. Discard unused raw marinade and wash the preparation bowl and tools.
- Stir the cold sauce and serve it alongside the hot skewers. Remove meat from skewers before serving to young children.
Helpful tips & substitutions
- For oven cooking, arrange on a lined tray and bake at 425°F for 15–20 minutes, turning once and checking for 165°F.
- Use separate utensils for cooked chicken and the uncooked marinade.
Storage & make-ahead
Refrigerate chicken and sauce separately within 2 hours. Use chicken within 3–4 days and sauce within 3 days. Reheat chicken to 165°F; keep sauce cold.
How to serve it
Serve with lemon rice, chopped tomatoes and warm pita.
