Choose a clear tea base

A London Fog begins with Earl Grey, whose bergamot character should remain noticeable after milk is added. Brew a controlled, appropriately strong portion using the tea's directions and the recipe's quantities. Leaving a tea bag in far too long can add harshness without giving the clean flavor you want. Remove it before assembling the drink so the flavor stops changing while you prepare the milk.

Make syrup a supporting flavor

Vanilla and cardamom can complement the tea, but both can take over if the syrup is too strong or too generous. Prepare the syrup according to the linked recipe and strain any whole spices. Add a small amount to the tea, taste, then decide whether more is needed. Keep the remaining syrup separate rather than assuming every mug needs the same sweetness.

Warm and foam the milk

Heat milk gently with an appropriate method and avoid scorching it. Froth only the amount you plan to use. The foam should add a light top, not replace most of the beverage. If choosing a plant-based alternative, consider whether it is already sweetened and whether it foams well. Those differences affect both the flavor and the appearance of the finished drink.

Assemble while warm

Combine the tea and syrup, then add warm milk and a modest cap of foam. Taste the first mug before scaling up for guests. A little extra tea may improve a milky cup more than another spoon of syrup. The outside recipe provides a complete vanilla-cardamom version; this guide focuses on maintaining the balance between the recognizable tea and its additions.

COOK IT AT HOME

Cardamom London Fog

A London Fog combines Earl Grey tea with warm milk and vanilla. One cardamom pod adds a gentle accent without overwhelming the tea’s bergamot character. Brew the tea separately and warm the milk gently, then combine; boiling the whole mixture can make the tea harsh and the milk taste cooked.

A home-kitchen recipe to accompany this guide. Ingredient brands and equipment can change cooking times; use the texture and doneness cues below.

Ingredients

  • 2 Earl Grey tea bags
  • 300 ml freshly boiled water
  • 1 green cardamom pod, lightly cracked
  • 250 ml whole milk
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon vanilla extract

Step-by-step method

  1. Put tea bags and cracked cardamom in a heatproof jug. Add 300 ml freshly boiled water, cover and steep for 3–4 minutes. Remove bags and strain out the cardamom.
  2. Warm milk and sugar in a small saucepan over low heat until steaming but not boiling. Stir in vanilla. Whisk briskly or use a milk frother to make a light foam; do not fill the saucepan so high that foaming milk can spill.
  3. Divide tea between two mugs, pour in warm milk and spoon foam over the top. Serve once the drink has cooled to a comfortable temperature.

Helpful tips & substitutions

  • Use a barista-style oat drink in place of milk if suitable, checking that its flavor and added sugar fit the recipe.
  • One cardamom pod is deliberate. Adding several changes the drink toward a strongly spiced milk tea and hides the Earl Grey.

Storage & make-ahead

Make only the amount needed. Refrigerate any leftover milk tea within 2 hours at 40°F/4°C or below and use within 24 hours; it will lose its foam.

How to serve it

Serve with shortbread or a plain scone. The vanilla milk already adds richness, so keep the accompanying sweet small.
